Food Safari Fire goes live – join us to meet some of the stars of the show and learn some of the recipes and techniques and devices that help us harness fire. Start with a good coffee and something small and delicious from one of Sydney’s top bakers; then on to a Fish on Fire cooking class with Dimitri from De Costi. He’ll show us how to cook prawns, fillets and whole fish over charcoal: then on to the realm of the Puharich family – we’ll visit the smoker known as Kong and be there as the 12 hour brisket comes out; have a taste and then take a guided tour through all the cuts and how they’re cooked. We then visit one of the BBQ kings at his retail shop, which is full of devices and types of charcoal…you’ll taste some of his treasured arrosticini (Abruzzese lamb on skewers) before visiting our Vietnamese ‘man of fire’ Ben Nguyen who will share a number of recipes and techniques with us. Includes many tastes, lunch, bus transport (with extra room for big eskies and bags of charcoal purchased)
