Hello dear friends,

What an overwhelming response we’ve had to our safaris for this year and our 2022 trips. It’s so heartening to know that this window on different worlds in Australia is something that you love. So…here is some of what we’ve got planned.

Chiosco Lunch

Every year at the start of summer we’ve been lucky enough to have talented young Italian chef Giuseppe Fuzio create a magic menu for us at Chiosco restaurant right on the water at The Spit. I sent him a quick text last week to suggest – “What do you reckon Giuseppe? Are you up to do a Gourmet Safaris lunch?”

Quick as a flash, this came back…“YES!!! Let’s do a Southern Italian Coastal Lunch”… plus a quick “top of his head” list of dishes that made me instantly hungry!

“Vannella burrata, peach, mint oil, heirloom tomato
Tuna carpaccio, watermelon, basil, pinenuts
Spaghetti alla chitarra, Zucchini, prawn tartare, zucchini flowers
Swordfish steak, Sicilian caponata

Those could be some of the dishes…“

Well indeed, they are some of the dishes. This feast, with matched wines from Gapsted Wines in the Victorian High Country and a chilled glass of prosecco to start is $165 a head.

Truly THE lunch of the year…so…please consider coming with friends or family, or by yourself. We will look after you.

Gift Certificates


This is always a hugely busy time of year for Suzy who schedules 6 months of safaris…and these are the things she juggles in terms of events that may impact our safaris:

Ramadan, Easter, Greek Easter, Grand Finals, School holidays, Persian New Year, Mother’s Day, Father’s Day, Valentine’s Day, long weekends, staff birthdays and family commitments…and so much more…

PLUS each safari has at least 6 businesses involved with their own schedules…it’s a big job as you can imagine!

We have so many safaris on offer that a gift certificate starting at $65 is a perfect gift.

Our Breakfasts – Cypriot in Marrickville, Lebanese in Greenacre and Turkish in Auburn are such a delicious insight into cuisines and such a joyous start to a day.

Marrickville Producers Safaris on Thursdays introduces cheesemakers and gin distillers, coffee roasters, sustainable butchers, providores extraordinaire and a cracking lunch…led by Maeve.

Our French safari is magnifique and showcases some of the best finds and tastes of this major world cuisine.

Vietnamese Walking Safari in Cabramatta is led by food obsessed local Peter Nguyen who loves showing off his backyard and all its deliciousness.

Our Spice Safari opens up the varied spices and ingredients of Persian, Turkish, Lebanese, Indian and Sri Lankan cuisines.

Our Middle Eastern Safari takes us into the best finds of the Turkish and Lebanese worlds with a glorious lunch and finishing with stretchy ice-cream.

Our Afghan Safari combines some of the delicious tastes and ingredients in Merrylands PLUS a visit to a family home with a cooking demonstration and lunch.

Our Best of the Mediterranean Safari includes warm welcomes and many generous tastes from the Cypriot, Italian and Sardinian worlds, with a gnocchi making demonstration and lunch.

Our Newtown Enmore Walking Safari includes visits to artisan craft beer breweries, candle maker, street art, award winning ice-cream, tastes of Egyptian and Sri Lankan food.

Our Turkish Walking Safari in Auburn is led by passionate cook Ulku Gani and visits a number of food businesses with generous lunch.

Our Italian Walking Safari in Haberfield is led by Sam Cosentino and explores some of the small family food businesses including cheesemaker, chocolate artisan, fruit and veg, wine shop, deli/emporium and butcher.

Our Lebanese Safari in Punchbowl is led by Lebanese food goddess Judy Saba and includes all the ingredients and tips you need to create feasts at home…plus many tastes and lunch.

Plus of course our wonderful banquets.

We will have the dates for February – July 2022 in the next short while.


Victorian High Country


We have just a few spaces left on our Victorian High Country Safari – 6th to 11th March 2022.

This is simply THE best time to be in the heavenly valleys of the King, Ovens and Kiewa rivers. The trip starts with a glass of prosecco high above the vineyards with a sweep of valley and mountains around us…and finishes with a bocce competition and al fresco lunch and more prosecco (we are on the Prosecco Road!)

 

In between there are so many inspiring visits to growers of yuzu and chestnuts, pumpkin seeds and an oil mill, hatted restaurants, a couple of glorious home visits, a visit to a stylish art gallery and quick watercolour demonstration, savouring artisan ice-cream on a stately lawn watching the beautiful Friesian cows heading to afternoon milking, time in pine forests and by mountain streams, watching the sunset from the deck of a stylish winery as the kangaroos hop amongst the vines, a walk through a stunning garden… this is a magic safari… beautifully paced, full of incredible hosts, great food and wine…of course!

International Safaris 2022
